YELLOW TEA
Yellow tea is one of the six major types of tea in China. It is a type of lightly fermented tea, renowned for its distinctive "yellow leaves and yellow liquid" appearance and its mild and sweet taste.
The key to making yellow tea lies in the "steaming and oxidizing" process: After the green tea leaves are withered (by high temperature to inhibit enzyme activity), they are wrapped or piled up to undergo slow oxidation and fermentation in a humid and hot environment, which breaks down chlorophyll and converts tea polyphenols. This process results in the distinctive yellow infusion, yellow leaves, and mellow flavor of yellow tea.
Yellow tea is like a "recluse" among teas, combining the freshness of green tea with the mellowness of black tea. It is suitable for enthusiasts who seek a mild taste and are interested in exploring niche tea varieties.
